Filtration methods for making Turkish süzme (thick) yogurt

In Turkey süzme yogurt, a concentrated thick yogurt, is produced from cow and ewe's milk by the traditional method of allowing the yogurt to drain through cotton cloth bags which, sometimes, are stacked on each other to improve drainage. [Continues.]
