Fish species identification by isoelectric focusing on agarose gel

Identification of fish species is usually based on the physical appearance of the fish, however with products such as skinless fillets, minced fish and fish fingers this is not possible. Chemical methods are then employed such as disc electrophoresis or more recently isoelectric focusing. [Continues.]
